-6 cloves garlic, crushed
-2-4 thai chili peppers (or 1-2 serrano peppers), crushed
-1/4 c cooking oil
-1 1/2 to 2 lbs chicken meat (or tofu), sliced into bite sized pieces
-3 tbsp oyster sauce
-2 tbsp fish sauce
-1 teaspoon sugar
-1 Red Bell Pepper, sliced into thin strips
-2 cups fresh sweet basil leaves
-cilantro (for garnish)
-1 sliced cucumber (to serve on side)
Heat oil in deep pan or wok over high heat until smoking.
Add crushed garlic and chili peppers, stir quickly once and immediately add sliced chicken meat or tofu. Stir.
Add oyster sauce, fish sauce and sugar, and stir fry until chicken is cooked through (or tofu is heated through) about 8 minutes.
Stir in Bell Peppers for 30 seconds and turn heat off.
Add basil leaves, stir, and serve hot with jasmine rice , cucumber and cilantro on the side.
